This is the homemade broth that I always make at home when I want to make picadillo soup, chicken soup or just serve an easy everyday broth but with all the flavor.
It is the one that pimare has always prepared at home and its recipe is so delicious that I only make it in the pressure cooker to save time but you can prepare it in a traditional pot as always.
Today reminded me of those days when we came home from school at lunchtime and my brothers and I played guessing what we would find when we went home. How much those seconds in the elevator gave of themselves! I hope you like it.
Ingredients
- 1 onion
- 2 leeks
- 3 carrots
- 1 turnip
- 1 chicken housing
- 2 chicken hindquarters
- 1 sprig of fresh parsley
- Salt and black pepper (to taste) beans
- 2 Bay leaves
- 5 litres of water
- a splash of fine wine of good quality
Directions
This chicken broth can be done with or without espresso pot. Although I prefer the espresso pot because it is much faster, I will explain the two ways to do it.
Wash and peel the turnip and carrots. Remove the skin from the onion and leeks and cut in half.
If the chicken has skin, remove it to avoid extra fat in the broth.
To use the cooker Express (to save time and electricity), put all the ingredients inside and cover. Let simmer 30 minutes since it starts to beep. When it has passed the time, leave to cool in the Pan
If you want to use the traditional method for making chicken broth, put all ingredients in a large pot to cook over medium-low heat for one hour and a half
Once the chicken broth is ready and still hot, remove the vegetables and chicken from the saucepan. To strain it, we will use a large strainer. On top of it, place a large cotton or linen gauze and strain the broth that will be freed from impurities and the rasa that we do not want.
This will make the broth clear and free of grease and impurities. It is important to do it hot because it will be easier for everything that we do not want to find to strain.
Once strained chicken broth, remove the foam if any
Serve the chicken stock piping hot with a little mint and a splash of fine sherry or manzanilla de Sanlúcar for an extra touch of flavour. If we want to eliminate the alcohol, we can give the broth a boil and it will maintain the flavor without the alcohol
