Estos Mac & cheese, son los macarrones que probé por primera vez en mi primer viaje a Estados Unidos. Habíamos estado en la sinagoga donde mi hermana americana tenía un ensayo y luego fuimos a cenar a casa de Sophie, una de sus amigas.
When he got home, his mother took a huge dish out of the oven. Yp I thought it was lasagna but found out it was the creamiest macaroni I'd ever tasted.

Ingredients
For the onions
- 2 onions, julienned
- 50 g butter
- a little salt
For the macaroni:
- 300 g macaroni or your favorite short pasta
- 60 g butter
- 60 g flour
- 650 ml milk
- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon of Walnut nutmeg ground
- 1/2 teaspoon salt
- 1 teaspoon Dijon mustard
- 100 g Gruyère cheese
- 100 g cheddar cheese
For the crisp
- 1 baguette, sliced
- 2 tablespoons of olive oil
- a little salt
- 4 tablespoons grated Grana Padano
Directions
Chop the onions and sauté them in a little butter until golden brown. Reserve.
Cut the slices of bread and put them on a baking tray, sprinkle them with a little oil and brown them on the grill. When they are golden brown, crush them with a piece of Grana Padano. Reserve.
Grate the cheeses and set aside. Heat the milk slightly.
Cook the pasta leaving it whole (about 3 minutes less than the manufacturer's cooking time).
In a saucepan, heat the butter. Add the flour and let it brown for a few minutes (about 4-5 minutes).
After this time, we begin to add the warm milk little by little without stopping stirring: add a little and mix stirring well, and so repeat until all the milk is incorporated. Add the spices: nutmeg, black pepper and salt and let it boil for about 8 minutes until the béchamel is lump-free, light and with a delicious flavor.
Add the onion and stir well. Add the mustard and grated cheeses. Mix until the cheese has melted completely. Then add the macaroni and stir until everything is well integrated.
Remove from the heat and cover the saucepan with the crushed bread and grill for a few minutes until golden brown, and enjoy!

- You can bake it in individual bowls and gratin individually
