With these Tomato gnocchi with cheese sauce and basil you will have all the flavor of Italy at home in the easiest way.

You only need 3 main ingredients and a pair of scissors to make them and you will love the sauce to accompany your light pasta dishes from now on.

For the gnocci

  • 400 g flour
  • 120 g tomato paste
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 200 ml of water
  • 1 egg yolk

Stop the sauce

  • 100 g butter
  • 1 clove of chopped garlic
  • 80 g Grana Padano
  • a bit of nutmeg
  • fresh basil
  • salt
  • freshly ground black pepper
  • a little extra virgin olive oil

Directions

In a bowl put the flour. Make a well in the center and add the tomato concentrate, salt and egg yolk. Mix incorporating all the ingredients until you have a thick sand. Add 1/2 glass of water and mix again. Knead with your hands, incorporating the water little by little until you get a uniform ball.

Cut the dough in half, and with one part form a cylinder. We repeat with the other party. Let it rest for 15 minutes.

Meanwhile, grate the Grana Padano cheese and chop the basil into strips. In a large saucepan we put plenty of salted water to boil.

When the water is boiling, and with the help of scissors, cut pieces over the boiling water. Let it cook until it rises to the surface and once it rises, leave it for a few more minutes. In total about 8 minutes from the time we cut them over the water. Reserve a glass of the cooking water.

In a frying pan, put the butter and chopped garlic. When it is lightly browned, add the chopped basil and grated cheese and stir in circular movements in the same saucepan to butter the sauce, until the cheese has melted and we have a creamy sauce.

Add the cooked gnocci and mix well. Add a saucepan of the water from cooking the gnocchi and stir in circular motions.

Serve and grate a little more Grana Padano on top. Enjoy!
